Ashcombe is a semi-hard cheese made from cow's milk, with a captivating layer of wood ash through the centre. It undergoes a traditional brine rinse and is aged for 3 to 4 months to develop it's distinctive flavour. With a buttery, savoury taste and nutty undertones, it sits well on any cheeseboard or tossed through a rocket salad.
Created by David Jowett of King Stone Dairy, Ashcombe draws inspiration from the French Morbier cheese. Its name pays homage to the “Ash” vein running through it and the iconic “Coombes,” steep-sided hills enveloping the region where it is made.
