About Our Honey

Honey, often referred to as nature’s sweetest gift, is a natural syrup produced by honeybees from the nectar of flowers. With its unique blend of sweetness and rich flavour profiles, honey is not only a versatile sweetener but also a key ingredient in a wide range of culinary creations, from savoury marinades to sweet desserts.

Our honey is crafted by local bees in hives on our 1,000-acre Somerset estate. The hives are skillfully taken care of by the London Honey Co., and our bees play a vital role in ensuring biodiversity throughout our estate gardens. The honey produced is delicate and floral, reflecting the variety of flora from which the bees collect their pollen and nectar.

Recipe 1: Honey BBQ Chicken Marinade

This chicken marinade is a delicious and popular flavour combination that can be used in any season. You can also brush it over a steak or use it as a tofu marinade for any vegetarians out there.

You’ll need:
100g honey
50g barbecue sauce
2 cloves garlic, minced
A dash of hot sauce or ground chilli, to your preferred level of spiciness
Salt and pepper

– Whisk all ingredients together until combined.

– Place 4 chicken breasts in a shallow dish and pour the marinade over.

– Set aside for at least 30 minutes to allow the flavours to meld together.

– Using a grill pan on a medium-high heat, cook the chicken for around 8 minutes on each side. Ensure the chicken is fully cooked through before eating.

– Serve with your favourite side dishes, such as potato, rice, salad or stir-fry vegetables.

Recipe 2: Honey Biscuits

Perfect with a cup of tea, these quick and easy honey biscuits are a great way to highlight the sweetness of honey.

You’ll need:
100g soft butter
100g sugar
1 large tablespoon of honey
1 egg yolk
1 teaspoon of cinnamon
180g self-raising flour

– Beat the butter and sugar in a bowl with a wooden spoon until creamy. Add the honey and egg yolk, and beat to combine. 

– Next, add the cinnamon and flour. Mix to make a soft dough texture.

– Using a teaspoon of the mixture, roll into small balls and place spaced out on a lined baking tray.

– Bake in the oven for 10 – 12 minutes at 175°C. Allow to cool for 5 minutes before you tuck in!

Recipe 3: Honey Mustard Dressing

A classic flavour combination, this honey mustard dressing can be used in many different ways. A tasty salad dressing, poured when sauteing vegetables, or drizzled over a roast vegetable quinoa bowl. 

You’ll need:
Juice of small lemon
1 tbsp of red wine vinegar
2 tsp wholegrain mustard
2 tsp honey
Small handful of finely chopped parsley (or basil)
1 tbsp of olive oil

Simply whisk together all of the ingredients and adjust to your taste preference.
